It's the week of Thanksgiving and I'm in a baking mood. I spotted these adorable pumpkin pie minis on another blog and thought, "They're so cute. I want to try them!"
After cutting the Pillsbury pie crust into 4" circles and gently pressing them into the individual muffin tins, I filled the shells with pumpkin and popped them into the oven.
After baking, I wondered if they would stick to the pan. Luckily, they lifted out quite easily. While a dollop of Cool Whip would hide their wrinkled appearance, they taste just fine! I even carried a few to Disney World for my sister and her family to enjoy during their Thanksgiving in the Magic Kingdom.
