Lemon Curd & Calamondin Marmalade

January puts me in the mood to prepare and eat delicious, homemade foods. One of my favorites has been my British mother-in-law's lemon curd. Mmmmm! And this weekend, not only did I receive a luscious new jar of this sunshiny goodness, but a new treat to tickle and tantalize my taste-buds - calamondin marmalade! Calamondins are small, orange-colored citrus fruits with a surprising flavor combination of sweet and sour. While in North America the calamondin is mainly grown as an ornamental plant, Margaret and Dad have a lush and massive shrub overflowing with these gems right in their garden! A slice of Italian Sunflower toast slathered with these two citrusy spreads will be my morning breakfast for days to come!
